I was wondering how differently you can change the nose?

Mine is quite long and I was wondering if it was possible to shorten it as it were?

The characteristics of the nose can be changed in many ways, including shortening, which you can see in many of the images on the rhinoplasty photo gallery:

It is also possible to maintain reduced visibility of the nostrils from the front despite the shortening.

If by shortening you mean reduced projection (how far it sticks out from the face), this is also a fairly common element of rhinoplasty surgery, and it is relatively frequent to combine reduced projection and shortening.
